Looking for a Pastry Executive Chef/Macarons
General Purpose
Direct, oversee a production team and also be hands on in all aspects of production of French Macarons and desserts, inventory control, food cost, purchasing of supplies, quality.
Responsibilities and Duties
Uphold the high standards of French Macarons policies, quality and handbookMaintain order. Discipline, safety and organization in the kitchenManage daily operationsDevelop production schedule according to Purchase ordersDevelop working schedule for all workersRequires an understanding for Federal, state, and local kitchen health and safety standardsFollow all standard recipes stablished by the companyManage all ascepts of production department and implement new processes and procedurs for efficiency purposesWork alongside executive chef to ensre food cost is maintainedWork alongside executive chef to ensure labor costs are maintainedEnsure all personnel follow GMPs and uniform codeMake decisions and take actions based on previous experience and good judgement to accommodate unusual situations and keep the owners informed at all timesMaintain positive and professional relations with vendors, and proper interaction with the staffEnsure all records are maintained for GMP safety audits.Inspect deliveries to ensure highest level of quality and within food safety guidelinesQualifications

-Bachelors degree in the area of specialty
-7 years experience in High production bakery or in related area
